Fruit and salad are wonderful, healthy combinations, and you’ll find you need less dressing when you use fruit. Strawberries work well, and you might also try melon in season. Apples are good all year long.
Recipe yields four servings

2 tablespoons canola oil

2 tablespoons cider vinegar

1 teaspoon dried onions

1 teaspoon sugar

1 pint fresh strawberries, stems removed and sliced

1 six-ounce bag of prewashed baby spinach

Make dressing first, so the flavors have a chance to blend.

Combine oil, vinegar, dried onions, and sugar in a small jar, shake well and set aside.

Combine spinach and strawberries. Add dressing, let salad sit for a few minutes, and then serve.
