Health eCooking: Homemade Veggie Pizza

Here’s how to make pizza that’s healthful and easy. This pizza uses a store-bought crust, and squash and zucchini over a bed of hummus.

Ingredients

1 (about 14 inch in diameter) thin pizza crust
Cooking spray (olive oil flavor)
5 Tbsp hummus (original flavor)
1 cup mushrooms, sliced
1/2 cup red onion, sliced
1 clove garlic, minced
1 cup zucchini, sliced
1 cup yellow squash, sliced

Preparation

  1. Spray pizza crust with cooking spray and heat in oven (using directions on packaging).
  2. While pizza crust is heating up, sauté vegetables in pan until onion is translucent. Add
    freshly ground black pepper to taste.
  3. Take pizza crust out of the oven and spread with hummus. Then, spread vegetables over
    top evenly.
  4. Heat for one additional minute.
