Health eCooking: Traditional Muesli

Tired of breakfast from a box? Try a homemade cereal. Mix oats, almonds and cranberries for a traditional Swiss muesli, an energizing cereal that will jumpstart your day. Make muesli on Sunday, and enjoy it every morning, all week long.

Ingredients

2 cups rolled oats
1/2 cup whole raw almonds, coarsely chopped
1/2 cup dried cranberries
2 cups spring water
2 Tbsp. lemon juice
1 Tbsp. honey
2 ea. Granny Smith apples, peeled and grated

Preparation

  1. Combine oats, almonds and water in a large mixing bowl
  2. Add all other ingredients. Mix well. Refrigerate overnight
  3. Check consistency after one hour. Add more water if necessary
  4. Adjust sweetness or tartness by adding honey or lemon juice
