Health eCooking: Caramelized Onions

These savory, caramelized onions complement most dishes with their dark,
sweet, browned flavor. These tasteful onions can enhance many entrées, including chicken, fish, and even pastas.

Ingredients

4 Spanish onions, peeled & cut in half
1 tsp. safflower or grapeseed oil
1 sprig of fresh thyme or 1 tsp. dried thyme
Salt—just a pinch

Preparation

  1. With the tip of a sharp knife, remove the core of the onions.
  2. Slice onion halves thinly.
  3. Heat oil in large sauté pan on medium-high until slightly brown. Add onion slices. Season with thyme and a pinch of salt. Stir with a wooden spoon or a pair of tongs.
  4. Let onions render their liquid. As soon as most liquid has evaporated, onions will begin to brown. Stir regularly. Begin to lower temperature. Keep cooking until onions become soft and are nicely browned. Monitor the heat so that the onions keep browning while not burning. The longer it cooks, the deeper the flavor.
  5. Remove from pan and let cool or serve warm if appropriate.
