Health eCooking: Roasted Turkey & Orange-Cranberry Roll

Here’s an easy and interesting way to use your left-over holiday turkey. These cold Roast Turkey & Orange-Cranberry Roll-up sandwiches combine sweet and savory ingredients in a blend of flavors that please the palate. Healthful and delicious, these roll-ups are simple to prepare, and they present beautifully—just the right touch for unexpected guests during the busy holiday season.

Ingredients

1 cup plain hummus
3 Tbsp. dried cranberries, chopped finely
Zest of 1 medium orange, grated
1 lb roasted turkey breast, thinly sliced
1/2 cup of caramelized onions (see Nov.‘08 eHealth Connection recipe)
Six, 6” whole grain (high fiber) tortilla wraps

Please note that it is best, whenever possible, to use organic and/or local ingredients. The flavor is superior to conventional ones. Your health will also greatly benefit from “cleaner” food. Bon appétit!

Preparation

  1. Spread hummus on tortilla.
  2. Cover with turkey slices.
  3. Sprinkle cranberries over turkey followed by orange zest.
  4. Add several caramelized onion pieces,
  5. Roll tightly. Trim edges of each roll with a sharp knife.
  6. Cut into three 1” to 2” rolls. Cut each roll diagonally into two pieces. Stand each piece on its flat side. Serve chilled.
